Warm Spinach and Corn Salad

Ingredients:
4 servings Corn On The Cob
2 tablespoons Olive Oil
1 cups Onions
4 cups Fresh Express Baby Spinach

I Ate This!
Instructions:
Remove corn from cob into a bowl, scraping well to get remaining pieces and juices. Set aside.

Add olive oil to large skillet on MEDIUM. Add onions. Cook, stirring often, 10 min, until onions are soft, but not browned. Add spinach. Cook, stirring often, 4 min, or until spinach is wilted. Season to taste with salt and pepper. Add corn; cook, stirring constantly, about 5 min.
