Warm Potato Salad with Raclette


Ingredients:
1 servings Red Salad Potatoes
1 servings Purple Potatoes
1 servings Fingerling Potatoes
1/2 cups Shallots
1 tablespoons Dijon Mustard
1 tablespoons Red Wine Vinegar
3 tablespoons Olive Oil
1/2 cups Raclette

I Ate This!
Instructions:
Cut potatoes into small cubes and cover with salted water. Bring water to a boil and turn down heat for 10 - 15 min.
Whisk olive oil, red wine vinegar, dijon mustard and mix in chopped shallots.
Drain potatoes and mix in dressing. Add raclette cheese (cut in cubes) and stir until cheese is melted.
Serve warm.
