Instructions:
- Saute onions in 1/2 oil, until soft. - Add cubed tofu and saute over medium-high heat until slightly browned. - Add carrots, garlic, and cook until carrots begin to soften. - Add peppers and rest of oil and cook near desired doneness (keeping peppers somewhat al dente) - Add tamari and cook through for 1-2 minutes - Serve over rice
