they say that tamagoyaki is, ironically, the ultimate test of a sushi bar. it's usually the cheapest item on the menu, but takes a lot of time and preparation to make. that's why in the U.S., you'll more often find pre-made versions. to serve good tamagoyaki, a sushi chef has to spend a lot of time with little economic reward.
