Sweet and sour chicken

I love one pot wonders so here is a new wtist on an old favorite that you can do in he slow cooker.

Take your chicken cutlets and place them in the bottom of the crock pot.

Lightly top the chicken with the sweet and sour sauce.

Add some your mushrooms followed by your water chestnuts and crushed pineapple. It is ok to let some of the juice from the pineapple fall in but so not put the whole can of juice.

Layer in the rest of your vegi's. I like to add the frozen Stir fry veggis nexxt since they will thaw in the juices from the chicken and the pineapple. To the very top I add bok choy, celery, and red onion. I add these to the top so that they get more steamed then wilted.

Place slow cooker on high and it is done in just over three hours please it on low and let it cook for a full 8 hours if needed. I just bought one of those digital crock pots... GET ONE. They automatically switch to keep warm mode when your time is up so if you are at work and it only needs a few hours that is ok it will not overcook. Now that is what I call a smart apliance.!

Have fun!
