Instructions:
Cook onion, green pepper, and about 1 TBSP garlic in olive oil until tender. Add tomatoes, chop up with spoon, season as desired. Simmer while you do the other stuff. Boil pasta about 7 minutes and drain. Cook spinach in a small amount of water until wilted. Set aside to cool. Put ricotta in bowl. Add 3 beaten eggs, grated parmesan, and salt and pepper. When spinach has cooled, sqeeze out excess water and stir into ricotta mixture. Stuff shells with mixture, put in pan and cover with the tomato sauce. Bake 30 minutes in 400 degree oven.
