Potato and Pea Fritatta


Ingredients:
1.5 servings Red Potatoes
.33 cups Petite Peas (frozen)
2 tablespoons Extra Virgin Olive Oil
1 servings Onion, Raw
8 servings Organic Grade A Large Brown Egg Plus Omega 3
4 tablespoons romano cheese, grated

I Ate This!
Instructions:
Dice potatoes, boil 5 minutes. Turn on the broiler. Heat oil in 10-inch pan. Fry onion until soft, add potatoes and cook, but don't let it get too brown. Add peas for last couple of minutes. Put mixture in a bowl and let cool. Break eggs into the bowl and beat to mix. Then season with salt and pepper, and add cheese. Return mixture to frying pan, cook over medium heat about 8 minutes. Put it under the broiler until top golden and a bit puffed up. Let cool and cut into wedges to serve.
