Orecchiette with Turkey Sausage and Peas


Ingredients:
16.00 cups Heavy Cream
0.50 cups Low Sodium Organic Chicken Broth
8.00 servings Orecchiette Pasta
6.00 servings Sweet Italian Turkey Sausage
1.00 cups Parmigiano Reggiano Cheese
1.00 cups Petite Peas (frozen)
1.00 cups Cremini Mushrooms
5.00 tablespoons Extra Virgin Olive Oil
2.00 tablespoons Dry White Wine - Medium Glass
3.00 servings Goya Cannellini Beans

Instructions:
In a large pot, bring 6 quarts of salted water to a boil.

In a large saute pan over high heat, add 2 tablespoons olive oil. Season turkey with salt and pepper. Add turkey and saute breaking any large lumps until golden brown. Remove meat from pan and set aside. Add 2 tablespoons olive oil to pan and heat. Add chopped mushrooms and season with salt and pepper. Saute until all the liquid from the mushrooms has evaporated, about 5 minutes. Add the peas and saute for 4 minutes. Add wine to deglaze. Once wine has evaporated, turn heat to low. Add meat back to then pan. Add cheese and stir to incorporate. Add cream and bring to a simmer, continuing to stir.

Remove from heat and set aside.

When the pot of water has come to a boil, add pasta and cook until al dente, about 8 minutes. If the mixture is dry, do not hesitate to use pasta water if necessary. Check the seasoning and serve.
