One of the best foods on earth. :) Onions are very rich in chromium (a trace mineral that helps cells respond to insulin), plus vitamin C, and numerous flavonoids, most notably, quercitin. http://www.whfoods.com/genpage.php?tname=foodspice&dbid=45
