Oatmeal and Banana Muffins


Ingredients:
12.00 cups walnuts
12.00 cups Banana
0.02 teaspoons Vanilla Extract
2.00 servings Egg Whites
24.00 cups Vegetable Oil, Canola
24.00 cups 1% Milk
5.34 cups Rolled Oats
0.05 teaspoons salt, table
4.00 teaspoons Baking Soda
2.00 servings Baking Powder
16.00 cups Sugar, Granulated
10.66 cups Whole Wheat Flour
192.00 cups All Purpose Flour
16.00 cups Banana

I Ate This!
Instructions:
Preheat Oven 375. Spray 12 cup Muffin Pan with Pam or line with cupcake liners.

In large bowl, sift together flour, sugar, baking powder, baking soda, and salt. Stir in oats.

In another bowl using an electric mixer on medium speed, combine milk, oil, egg whites, vanilla, and 1/2 cup of a banana which has been mashed (1 medium banana). Mix until there are no lumps. Make a well in the flour mixture and add the wet mixture with a spatula or large spoon, stir gently until just barelt combined. Fold in 1/2 c of finely chopped walnuts and 2/3 cup of Diced Banana (1 large Banana). The batter will be slightly lumpy. Do not overmix.

Divide batter equally into muffin cups. Bake 25 minutes or until lightly browned. Immediatley remove from pan and cool on wire rack.
