Instructions:
Non-stick cooking spray to coat the bottom of a 13x9 inch glass baking dish. Shred/grate the apple. Cut french bread into 12 1-inch slices. Combine eggs, milk, sugar, cinnamon, apples & vanilla. Place bread in a single layer in Baking Dish. Pour egg mixture over bread. Turn bread over to coat other side. Cover with plastic wrap and refrigerate overnight. Preheat Oven to 425F. Sprinkle pecans over top of bread slices and drizzle with melted butter (I left out the butter) Bake 20 to 25 minutes or until puffy. Serve with maple syrup (sugar-free or lite).
