Mexican Lasagna Casserole


Ingredients:
10 servings Tofu
8 servings Corn Tortillas
6 servings Yellow Squash (summer)
3 servings Black Beans
6 servings Lite Sharp Celtic Cheddar
6 servings Mild Salsa

I Ate This!
Instructions:
Cook squash with onion & garlic; set aside. Mash tofu with cumin & peppers to taste. Set aside. Put down layer of tortillas in casserole dish. Cover with mix of 1/2 salsa and 1/2 water. Spread out tofu evenly over tortillas. Add another tortilla layer and cover in salsa/water mix. Mix squash and canned beans, and add as next layer. Top with another layer of tortillas. Cook at 350 for 40 minutes, covered. Uncover, add shredded cheddar, and cook uncovered for 10 minutes to melt cheese.
