Instructions:
Combine all ingredients together in blender or Cuisinart. Add cinnamon to taste. Cook in griddle on stovetop, measuring a heavy 1/4-cup of batter per pancake. (Makes about 7 pancakes.) Serve with fresh fruit, yogurt, or cottage cheese. Alternately, swap out the maple syrup for a pinch of salt and some scallions, and enjoy as a pre or post workout snack.
