Ingredients:
2 cups walnuts
3 tablespoons Walnut Oil
1 cups Sugars, Brown
2 teaspoons Vanilla Extract
1.5 cups Oat Flour
1 teaspoons Baking Soda
.5 teaspoons salt, table
.5 teaspoons Cinnamon Ground
2 cups Oats - Rolled
1.5 cups Semisweet Chocolate Chips

I Ate This!
Instructions:
Preheat oven to 350.

Blend walnuts in food processor 30 sec, or until ground fine. Add in walnut oil and blend until mixture resembles natural peanut butter.

Whisk together brown sugar and 1/2c water in small saucepan and bring to boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract and stir until no lumps remain.

Whisk together oat flour (you can make this by food- processing 1.5c oats), baking soda, salt and cinnamon in separate bowl. Stir oat mixture into walnut mixture. Cool 10 min. Fold in whole oats and chocolate chips.

Roll cookis into 2" balls and place 2" apart on baking sheets lined with Silpat. Flatten cookies with your hand. Bake cookies 10 min or so until they begin to brown and look dry. Cool 3 min on baking sheet then transfer to wire rack to cool completely.
