Fresh Blueberry Cobbler


Ingredients:
12 servings Splenda
1 servings Corn Starch
8 servings Blueberries, Fresh
1 servings Lemon Juice
4 servings All-purpose Flour
3 servings Pure Cane Granulated Sugar
12 servings Baking Powder
8 servings salt, table
3 servings Light Butter
.5 servings Skim Milk
6 servings Pure Cane Granulated Sugar

Instructions:
Heat oven to 400 deg.
In saucepan, mix 12 splenda packets and cornstarch. Stir in blueberries and lemon juice. Cooke over medium-high heat 4 to 5 minutes, stirring constantly, until mixture thickens and boils. Boil and stir 1 minutes. Pour into ungreased 2-quart casserole; keep blueberry mixture hot in oven.

In medium bowl, mix flour, 1 tablespoon sugar, baking powder, and salt. Cut in butter until mixture looks like fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot blueberry mixture. Sprinkle 2 tablespoons sugar over dough.

Bake 25 to 30 minutes or until topping is golden brown. Serve warm with sweetened whipped cream or ice cream.
