Aunt Rena's Chicken Enchiladas


Ingredients:
4.00 servings Chicken Breast
0.50 cups Onions, Green
1.00 cups Black Olives, Sliced
4.00 tablespoons Taco Seasoning
8.00 cups Organic Lowfat Sour Cream
0.25 cups Plain Lowfat Yogurt
2.50 servings Beans, Black
8.00 servings Multi-grain Tortillas
0.50 teaspoons salt, table
0.25 teaspoons Ground Cumin
0.33 cups Diced Green Chilies
0.13 tablespoons Wheat Flour, White, Cake, Enriched
0.50 cups 1% Milk
1.00 cups Cooper Fancy Shredded 4 Cheese Mexican Blend
1.00 cups salsa

I Ate This!
Instructions:
Dice and cook chicken; add taco seasoning to taste. Slice and combine olives, green onions, and rinse black beans and add. Gently cook frozen spinach. Add chicken and spinach to bowl; mix well. Place filling into 8 tortillas. Mix sour cream, yogurt, milk, cumin, salt, green chilis, and flour; pour over enchiladas. Top with cheese. Bake at 350 until hot throughout. Top with salsa.
